The Coorg Vinegar or Kachampuli an essential in the Coorg larder.

Kachumpuli( Cambogia Gummi-Gutta fruit extracts), a kind of vinegar peculiar to Coorg , where it is  used as a substitute to tamarind. It processed by heating the fruit and distilling the liquid. This fruit vinegar is very acidic compared to tamarind and much more potent when used a small quanity enhances sourness in the dishes. A must to be used for most of the Coorg delicacies along with the Coorg Curry Masala. The Kodavas famous Pandi Curry thrives when made with Kachumpuli.
